For the Peach Fillings
- 2 large peaches (peeled and sliced)
- 1/4 cup granulated sugar (adjust based on sweetness of peaches)
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp of ground nutmeg
For the Crumble Topping:
- 1 ½ cup plain flour
- ½ cup rolled oats (optional for texture)
- ½ cup brown sugar
- pinch of salt
- 1/2 (1 stick) cup unsalted butter (cold, cut into small cubes)

Instructions
- Preheat the oven to 180°C (350°F).
- Prepare the peaches: In a medium-sized pan, toss sliced peaches with sugar, lemon juice, vanilla, and nutmeg. Transfer to a Pyrex glass dish.
- Make the crumble topping: In another bowl, mix flour, oats (if using), brown sugar, butter and salt. Add the cold butter cubes and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
